shortbread
Crunchy, buttery shortbread. Mmmm.
ingredience:
100g butter
50g caster sugar
100g plain flour
50g ground rice flour
The ground rice flour in these biscuits gives them a nice, crunchy texture.
Heat the oven to 190c / 375f / gas mark 5.
Grease a baking tray with butter.
Cream together the butter and sugar until the mixture goes light and fluffy.
Add the flour and ground rice and mix well. Knead the mixture with your hands to bind it into a thick dough.
Either
Roll the dough into a sausage and cut this into 5mm slices. Place the rounds onto the baking tray
OR
Roll the dough out into a 5mm thickness and cut it with a floured cutter (whichever shape you happen to have handy, we like squares) and put these cut shapes onto the baking tray
Bake the biscuits for 15 minutes, they should be a light golden brown.
You can adapt this recipe by adding a tbsp or so of extras (chopped nuts or chocolate chips work well).
